Our Chef Alla Rojas has taken over the role of head chef at Spanglish, bringing decades of culinary experience to the family-owned restaurant. Born in Perez Zeledon Valley, Costa Rica, Allan worked in the tobacco and sugar cane farms as a young man, funding his evening high school studies. At 15 he moved to the USA to pursue his career in the culinary arts, beginning as a dishwasher at multiple restaurants before his hard work was noticed, quickly leading to further work as a kitchen porter, then commis chef.
An employer recognized his innate talent and desire to further his culinary knowledge, helping Allan enrol at the Culinary Institute of America in New York. Post-college, Allan travelled the States, continuing to refine his skills at acclaimed restaurants in New Jersey and Connecticut. Before long he became the head chef at several restaurants specializing in Mexican, Latin, Italian and Caribbean cuisine. In 2001 he moved to the tropical paradise that is the Cayman Islands, working in renowned kitchens.
